ROASTED CHICKEN WITH DATE SYRUP GLAZE

Date syrup is essentially liquified dates, this sweetener boasts the same heart-healthy benefits as the fruit itself.  Date syrup is free of sodium, cholesterol, trans fat, and saturated fat. It’s also high in minerals that support heart function, like potassium and magnesium.

Ingredients

1 whole chicken, about 3-4 pounds

1/2 cup date syrup

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon ground cinnamon

1 teaspoon ground coriander

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 lemon, cut into wedges

INSTRUCTIONS

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, whisk together the date syrup, olive oil, cumin, cinnamon, coriander, paprika, salt, and black pepper until well combined.
  • Rinse the chicken and pat it dry with paper towels. Place it in a roasting pan.
  • Brush the chicken all over with the date syrup glaze, making sure to coat it evenly.
  • Place the lemon wedges in the roasting pan around the chicken.
  • Baste the chicken with the glaze every 15-20 minutes during cooking.
  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  • Serve the chicken with the roasted lemon wedges and any remaining glaze on the side.
